Recipe of the Week: Sun-Dried Tomato Pesto

SUNDRIED TOMATOE PESTO

If you’re looking for an easy, crowd-pleasing addition to your spring and summer barbecues, this sun-dried tomato pesto is hard to beat. It takes just a few minutes to make and adds incredible flavour to everything from pasta to fresh burrata.


Ingredients

  • ½ small tub of sun-dried tomatoes
  • 1 garlic clove
  • A handful of fresh basil leaves
  • 1 small packet of pine nuts (around 100g)
  • 50–75g Parmesan cheese, grated
  • Oil from the sun-dried tomato jar, plus a little extra olive oil if needed


Method

Add the sun-dried tomatoes, garlic, basil, pine nuts, and Parmesan to a food processor or blender. Pour in the oil from the tomato jar and blend until smooth. Add a little extra olive oil as needed until you reach your preferred consistency.

That’s it — a rich, vibrant pesto that’s packed with flavour.
