My Easy muffins, created because I had no snacks for the kids! But also a perfect mid morning snack!
- 3 super ripe bananas
- Dash of maple syrup
- 2 eggs
- Tub of ricotta
- 1 cup plain flour
- 1 tsp baking powder
- Handful of dark choc chips
How to:
- Mash the bananas
- Mix in eggs + maple syrup
- Stir through ricotta
- Add flour + baking powder
- Fold in choc chips
Bake at 180°C (350°F) for 20 mins
Check they’re cooked through
Let cool (if the kids will wait!)
