Pikelets; a breakfast fave
We love a pikelets an alternative to a pancake or crepe. I started making them thanks to my lovely friend Marie who shared the idea of using the starter discard but don’t worry you don’t need to use it.
150 g plain flour
125g milk
100g flour
Tsp bicarbonate
2 tsp sugar
Simple really to mix all of these ingredients, it will seem thin.
Heat a pan with oil and cover the pan with the batter.
When you flip?
You will see bubbles appear and the batter will be cooked but still pale. Flip over to brown both sides.
Serve with butter and honey (that’s my fave)
