Banana Bread with Cacao Nibs

 

A delicious and wholesome banana bread with a hint of cacao for a rich, indulgent twist.  

Ingredients
- 3 ripe bananas  
- 2 tablespoons honey  
- 2 eggs  
- 200g yogurt  
- 200g self-raising flour  
- 1 tablespoon cocoa powder  
- 2 tablespoons cacao nibs  

The Method
1. Preheat the oven to 160°C (320°F)and grease a loaf tin.  
2. In a bowl, mash the bananas until smooth.  
3. Add the eggs, honey, and yogurt, then mix until well combined.  
4. Gradually add the self-raising flour and cocoa powder, stirring until a smooth batter forms.  
5. Fold in the cacao nibs.  
6. Pour the batter into the prepared loaf tin and spread evenly.  
7. Bake for 40 minutes or until a skewer inserted into the centre comes out clean.  
8. Allow to cool before slicing.
